 7.

Where's the meat/filling in my patty?

"I didn't get any meat - it's only gravy!"

For each particular variety of patty, an appropriate amount of meat/filling is cooked along with the matching spices and other ingredients in very large quantities.  This large quantity is placed in a machine that inserts the meat/filling, folds and cuts-out each individual patty.  Patties are checked at regular intervals to ensure they are within an appropriate weight range.  It is not technically possible ensure that each patty has the exact same amount of meat/filling.

Furthermore, patty meat/filling cannot be too thick or in large chunks otherwise the machine would not be able to function properly.  Alternatively, snack items such as patties would have to be much larger in order to accommodate larger chunks of meat/filling.

We believe that we have reached an acceptable, however, not perfect, balance which allows us to produce a reasonably priced product with a great taste.

Can I buy your breads / patties at supermarkets like No Frills, Food Basics and Whole Foods?

No.

2.

Where can I buy Allan’s products?

See the WHERE TO BUY sections of this website. Many of our products can be found at a variety of Caribbean food marts and shops.

3.

What’s the difference between the hot and cold patties?

No differences besides the temperature and tax. Cold patties have no tax and hot patties have tax.

4.

What’s the difference between the patties in the box and the patties in the plastic bags?

Boxed patties are our regular priced offerings.  Patties in plastic bags are called “seconds”.  Those patties are discounted in part because they may not meet the uniform size, weight, aesthetic qualities or other standard requirements of a food item produced by machine.  "Seconds" are identified during the production, baking and packaging stages.

5.

What’s the difference between the breads on the store shelves and the breads in the back area of the bakery?

Products on store shelves and in the back area are the same. Allan’s produces a lot of breads and patties.  Some are displayed and stocked for your convenience in the storefront while others are separated for delivery and special orders in the back area of the bakery.

6.

What is the difference between the coco bread and the butterflaps?

No differences. Butterflap is the same as coco bread, just yellow in colour.

7.

What is the difference between a peg bread and an egg bread?

Eggs are a part of the ingredients in the egg bread.  Egg bread has 12 pegs and the peg bread has 10 pegs. The egg bread may have a less sweeter taste than the peg bread.

8.

Why is the plantain tart filling red?  Aren’t plantains yellow?

Yes, plantains are yellow.  The pastry or crust of the plantain tart is also yellow.  We add food colouring to the plantain during the cooking stage to increase the colour contrast between the filling and the pastry.  A red filling makes for a more appealing product.

9.

Can you save breads and patties for me?

Customers are encouraged to call ahead and place orders for any product that we bake.  Your orders will be saved for the pick-up day.

10.

What if I can’t come or couldn’t come or I forgot to pick-up my order?

Please call us as soon as possible to inform us to make appropriate arrangements.  If we do not receive a call, your order may be kept for up to one (1) day and refrigerated or frozen.

11.

Why is there so little meat or filling in my patty?

Patties are produced by machine.  On some occasions there are patties which do not receive an appropriate amount of filling. Secondly, too much filling will cause patties to open during the baking process and therefore loose some filling.

12.

Why are the patties so “puffy”?

Pastries and other similarly baked goods often become puffy because of the amount and type of filling as well as the type of pastry used.

13.

Can I get a mixed box of patties?

Yes. Ask one of our store cashiers to put together a box of mixed patties.

14.

What is a hardo bread?

A hardo bread is a more dense style of bread.  The dough is firmer than a “Wonder Bread” style of bread.
